Paisley Silk Shiraz 2017
The Paisley Silk Shiraz was picked from a single vineyard site in the North-Western part of the Barossa, not far from the famous Kalimna vineyards. This vineyard was specially chosen because it is in a cooler part of the Barossa so the grapes hang longer and are picked later. The cooler site, combined with the stony/clay soils produce a more elegant style of Barossa Shiraz. There is still the typical rich Barossa fruit, but with some cooler climate spice, complexity and a fine tannin structure.
The Paisley Silk Shiraz is fermented in a few separate batches so different winemaking techniques could be employed to build complexity into the wine. The techniques employed on the different batches included pre ferment maceration, whole bunch and wild fermentation. The wine was matured in a combination of 25% new and the balance in used oak. The barrels were racked a few times to assist the natural clarification of the wine, allowing the wine to be bottled unfiltered. The wine was bottled at twelve months of age to keep the vibrancy of fruit and attractive youthful characters of the wine.
The colour is deep purple/red. The aromas are lifted and intense with mulberry fruit, some spicy French oak and roasted hazelnuts. The medium bodied palate has very bright, upfront plum, with hints of roasted meats and nutty complexity from the French oak. The palate is supple, full flavoured and balanced by clean acidity and chalky tannins. The wine finishes long with a mix of blackberry, choc mint and a fine line of tannin. It drinks well now but has medium term aging potential and will continue to improve with careful cellaring for the next seven to ten years.
